Banana & Pecan Puddings with Sticky Caramel Sauce

Banana Pudding
We’re ‘pudding’ the great taste of banana and pecan into a tasty treat then covering it with a deliciously syrupy river of caramel. With a scoop of ice cream on the side, it’s a taste sensation that will stick with you!

Ingredients

  • 1 packet White Wings Unbelievably Good Banana Bread
  • 80g vegetable oil
  • 2 medium (196g) ripe bananas, mashed
  • 80mL water
  • 160mL coconut cream or plant-based milk of choice
  • 1 cup chopped pecans
  • Vegan ice cream, to serve

Sticky Caramel Sauce

  • 100mL full fat coconut cream
  • 1 1/2 cups CSR brown sugar
  • Pinch of sea salt

Method

1. Pre-heat oven to 170°C (conventional). Grease the insides of 12 ramekins.

2. Prepare White Wings Unbelievably Good Banana Bread mix as per pack instructions, fold in 3/4 cup of chopped pecans.

3. Divide mixture evenly among ramekins. Bake for 30-35 minutes or until a skewer inserted into the middle comes out clean.

4. Caramel sauce: place the brown sugar, coconut cream and sea salt in a saucepan on medium heat. Bring to boil and reduce until thick and sticky.

5. Remove puddings from tray. Drizzle over a generous amount of caramel sauce, top with remaining chopped pecans. Serve while warm with a scoop of ice cream.
