Orange & Poppy Seed Friands (Gluten Free)

Ingredients
- 1½ cups pure icing sugar
- ¾ cup almond meal
- ¼ cup White Wings Coconut Flour
- 1 tbsp poppy seeds
- 5 egg whites from extra large eggs
- 160g butter, melted
- 1 tbsp orange juice
- 2 tsp finely grated orange rind
- Honey glazed orange slices
- 1 orange
- 2 tbsp honey
Method
- Pre-heat oven to 180°C (160°C fan-forced). Grease with butter and dust with almond meal 8, ⅓ cup capacity friands.
- Sift icing sugar into a large mixing bowl. Mix in the almond meal, coconut flour and poppy seeds.
- In a separate bowl, whisk the egg whites until frothy. Stir in the butter, orange juice and rind. Add to the icing sugar mixture and mix until well combined.
- Pour mixture between prepared moulds and bake for 20-25 minutes. Allow to cool for 5 minutes before removing from pans and cool completely on a cooling rack.
- For honey glazed orange slices, thinly slice orange, lay on a lined baking tray, drizzle with honey and bake for 30 mins at 130C fan. Top cooled friands with orange slices before serving.
