Gluten Free Chewy Date & Coconut Slice

Ingredients
- 1 cup White Wings Gluten Free Plain Flour
- 1 cup chopped pitted dates
- 1 cup Sugar
- 1 cup Desicated coconut
- 90g butter, melted
- 1 Tbsp Golden Syrup
- 1 Egg, well beaten
Method
- Preheat oven to 180ºC conventional or 160ºC fan-forced. Grease and line a 23 x 23cm square slice pan with baking paper, allowing paper to overhang the edges of the pan
- Combine sifted flour, dates, sugar and coconut together in a bowl. Add melted butter, golden syrup and egg. Mix together with a fork for 1 minute.
- Spoon mixture into prepared pan and press down gently. Bake for 20 minutes.
- Cool in pan for 5 minutes then while still warm, mark into slices, allow to cool in the pan completely before using the overhanging baking paper to lift out of the pan.
