Aussie Shaped Pav

To make the perfect Aussie Pav, we’ve put together a few helpful tips for you to make your Australia Day memorable:

Step 1: Print a map of Australia

Step 2: Place your map underneath a piece of baking paper.

Step 3: Prepare your Pavlova mixture

Prep Time: 20 mins

Cook Time: 2 hours

Serves: 8

Ingredients

  • 6 Egg whites, at room temperature
  • 1½ cups Caster sugar
  • 1½ Tbsp White Wings cornflour
  • 1 tsp White vinegar

Method

  1. Preheat oven to 120⁰C conventional or 100⁰C fan-forced.
  2. Put egg whites and sugar into a large mixing bowl and beat with an electric mixer on low speed for 1 minute. Increase speed to high and beat for 15 minutes or until mixture is thick and glossy. Add cornflour and vinegar and beat on low speed for 1 minute longer.
  3. Download and print your Australia map stencil by clicking on the two links above.
  4. Line your baking tray with baking paper, place your map underneath your baking paper as a guide to shape your pavlova. Spoon mixture onto your tray. Remember to remove your printed map before baking.
  5. Shape the edges of your pavlova by smoothing the sides in an upward motion, towards the centre. This will help hold the shape of your pavlova.
  6. Bake for 2 hours or until crisp. Turn oven off. Cool pavlova in oven with door ajar for 1-2 hours.
  7. Carefully transfer pavlova to a plate. Top with fresh whipped cream and berries of your choice. Add Passionfruit pulp as a finishing touch.
