Easter Surprise Muffins

Ingredients
- 60g Butter
- 1 ¾ cups White Wings Self Raising Flour
- ½ tsp Bicarbonate soda
- 1 tsp Ground Cinnamon
- ½ cup Brown sugar, firmly packed
- 1 Egg
- ½ cup Milk
- 1 tsp Vanilla extract
- 2 Bananas, mashed
- 10 Caramel chocolate Easter Eggs
Method
- Preheat oven to 200ºC. Line 10 holes of a (1/3 cup capacity) muffin pan with paper cases.
- Melt butter and set aside to cool slightly. Sift flour, bicarbonate soda and cinnamon into a large bowl. Add sugar and mix to combine.
- Place egg, milk, vanilla and butter in another bowl and whisk to combine. Add banana and whisk until mixed through.
- Make a well in the centre of the flour mixture and add the banana mixture. Stir with a wooden spoon until just combined. Fill each muffin case 1/3 full of mixture, Top each with a chocolate egg, then top with remaining mixture. Bake for 20 minutes, until cooked. Stand for 5 minutes and then turn out onto a wire rack to cool slightly. Serve warm.
- Tip: to reheat a muffin, place in a microwave and heat until just warm.
