Easter Surprise Muffins

Ingredients

  • 60g Butter
  • 1 ¾ cups White Wings Self Raising Flour
  • ½ tsp Bicarbonate soda
  • 1 tsp Ground Cinnamon
  • ½ cup Brown sugar, firmly packed
  • 1 Egg
  • ½ cup Milk
  • 1 tsp Vanilla extract
  • 2 Bananas, mashed
  • 10 Caramel chocolate Easter Eggs

Method

  1. Preheat oven to 200ºC. Line 10 holes of a (1/3 cup capacity) muffin pan with paper cases.
  2. Melt butter and set aside to cool slightly. Sift flour, bicarbonate soda and cinnamon into a large bowl. Add sugar and mix to combine.
  3. Place egg, milk, vanilla and butter in another bowl and whisk to combine. Add banana and whisk until mixed through.
  4. Make a well in the centre of the flour mixture and add the banana mixture. Stir with a wooden spoon until just combined. Fill each muffin case 1/3 full of mixture, Top each with a chocolate egg, then top with remaining mixture. Bake for 20 minutes, until cooked. Stand for 5 minutes and then turn out onto a wire rack to cool slightly. Serve warm.
  5. Tip: to reheat a muffin, place in a microwave and heat until just warm.
