Fudge Brownie Sundaes

Ingredients
Brownies:
- 1 White Wings Double Choc Fudge Brownie packet mix
- 60g (¼ cup) Vegetable Oil
- 2 (59g) Eggs
- 40mL (2 Tbsp) Water
- 1 cup Walnuts, chopped (optional)
Fudge Sauce:
- 150mL Pure Single Cream
- 40g (2 Tbsp) Water
- 20mL (1 Tbsp) Golden Syrup
Method
- Preheat oven to 180ºC conventional or 160ºC fan-forced. Grease a 5cm deep x 20cm square cake pan. Line the base with baking paper.
- Place brownie mix, vegetable oil, eggs and water into a medium mixing bowl. Beat with a wooden spoon for 1 minute until mixture is well combined.
- Spread brownie mixture into prepared pan. Bake for 30 - 35 mins† or until a skewer inserted comes out clean. Allow to cool in pan for at least 10 minutes, then turn onto a wire rack to cool. Time may vary depending on oven.
- To make hot fudge sauce, combine icing mix, pure single cream, butter and golden syrup in a small saucepan. Whisk over low heat until smooth and sugar is dissolved. Bring mixture to a boil and cook, whisking constantly, for 3 to 4 minutes until thick.
- Transfer mixture to a clean bowl and let cool slightly before serving.
- To assemble, place a brownie square in the bottom of a shallow bowl, top with a scoop of vanilla ice cream and pour hot fudge sauce over top.
