Fairy Cupcakes

Ingredients

  • 1 Pack White Wings Golden Butter Cake
  • 2 (59g each) Eggs
  • 60g (3 Tbsp) Margarine spread or soft butter
  • 190mL (¾ cup) Milk
  • 12 Paper patty pans
  • ½ cup Thickened cream
  • 1½ Tbsp Jam
  • 200g (1½ cups) Icing sugar

Method

  • Preheat oven to 180°C (350F) or 160°C for fan-forced. Place 12 paper patty pans into a standard muffin tray.
  • Empty the sachet into a mixing bowl. Add eggs, milk and margarine spread or soft butter. Using electric mixer beat on low speed for 30 seconds to combine. Increase speed to medium and mix for 4 minutes.
  • Spoon into patty pans. Bake for 30 minutes or until a skewer inserted into the centre comes out clean. Stand 5 minutes in the muffin tray before turning onto a wire rack to cool.
  • Cut a circle from the top of each cupcake about 2cm deep and remove. Fill each hole with a small amount of your favourite jam and whipped cream then halve the circle of cupcake and position to resemble wings.
