Almond Biscuits

Almond biscuits are an tea time classic.


  • 125g Butter, softened
  • 1 (59g) Egg
  • 1 ½ cups (225g) White Wings Plain Flour
  • 12 Blanched almonds
  • ½ cup (110g) Caster sugar
  • ½ tsp Almond essence
  • 1 tsp Aunty Mary's Baking Powder


  • Preheat oven to 170°C. Grease 2 baking trays.
  • Using an electric mixer, beat butter and caster sugar until light and creamy. Add egg and almond essence and beat well. Sift in flour and baking powder and mix with a wooden spoon to form a dough
  • Roll tablespoonfuls of dough into balls and place on prepared trays about 4cm apart. Press each ball with a floured fork. Press half a blanched almond onto each biscuit.
  • Bake 12 minutes or until golden. Stand biscuits on trays for 5 minutes, then transfer to a wire rack to cool.
