Method

Preheat oven to 220oC. Grease a baking tray and lightly dust with flour.

Sift flour, baking powder and salt into a bowl. Rub butter into flour using fingertips, until mixture resembles fine breadcrumbs.

Add milk and mix quickly with a knife to form a soft dough. Knead a few times, then lightly press to 2cm thick. Cut into 12 even-sized pieces. Place on prepared tray, leaving a 2cm space between scones. Brush tops lightly with milk. Bake 10 minutes or until golden brown. |
Variations:
Cheese Scones
Add ¾ cup grated cheese, pinch each of cayenne pepper and mustard to flour.
Before baking top each scone with a small amount of grated cheese.
Date Scones
Add ¾ cup chopped dates, 1 tablespoon sugar and ½ teaspoon cinnamon to flour.
Before baking sprinkle scones with mixture of cinnamon and sugar.
Sultana Scones
Add ¾ to 1 cup sultanas to flour.
