Pikelets

Ingredients

  • 1 cup (150g) White Wings plain flour

  • 1 teaspoon Aunty Mary or Excelsior baking powder

  • ¼ teaspoon salt

  • 2 tablespoons caster sugar

  • 1 egg

  • ¾ cup (185ml) milk, approximately

  • butter and jam, to serve

Method

1 Sift flour, baking powder and salt into a bowl. Stir in sugar.
2 In another bowl whisk egg and milk together. Add to dry ingredients and mix until smooth.
3 Heat a lightly greased griddle or non-stick frying pan over a medium heat. Drop tablespoonfuls of the mixture from the point of a spoon onto the hot griddle. Turn pikelets over when bubbles start to burst on surface. Cook second side until golden and cooked through.
