Sift flour, baking powder and salt into a bowl. Stir in sugar. |

In another bowl whisk egg and milk together. Add to dry ingredients and mix until smooth. |

Heat a lightly greased griddle or non-stick frying pan over a medium heat. Drop tablespoonfuls of the mixture from the point of a spoon onto the hot griddle. Turn pikelets over when bubbles start to burst on surface. Cook second side until golden and cooked through. |
