Preheat oven to 220°C. Grease an ovenproof dish with butter.

Cook cauliflower in boiling water until tender.Meanwhile, melt butter or margarine in a medium saucepan. Add flour and stir with a wooden spoon until frothy. Remove from heat and gradually stir in milk. Return to heat and stir constantly until mixture boils and thickens. Remove from heat and stir in mustard and 1 cup of the cheese. Season with salt and pepper.

Drain cauliflower and arrange cut side down in prepared dish. Pour sauce over cauliflower and sprinkle with remaining cheese. Bake 20 minutes or until golden. |
