Banana Loaf

Ingredients

  • 1¾ cups (260g) White Wings self raising flour

  • ¼ teaspoon bicarbonate of soda

  • ¼ teaspoon salt

  • ½ cup (100g) sugar

  • 2 eggs

  • ¼ cup (60ml) milk

  • 75g butter or Meadowlea margarine, melted

  • 1 cup mashed ripe banana (2 medium bananas)

Method

1 Preheat oven to 170°C. Grease a 5-cup capacity loaf pan and line with non-stick baking paper.
2 Sift flour, bicarbonate of soda and salt into a bowl. Mix in sugar.
3 In another bowl lightly beat eggs. Stir in milk, butter or margarine and banana. Add to dry ingredients and stir until just combined. Spoon into prepared pan.
4 Bake for 45 to 55 minutes. Leave in tin for 10 minutes before turning out onto a wire rack to cool.
