Preheat oven to 170°C. Grease 2 baking trays. |

Using an electric mixer, beat butter and caster sugar until light and creamy. Add egg and almond essence and beat well. Sift in flour and baking powder and mix with a wooden spoon to form a dough |

Roll tablespoonfuls of dough into balls and place on prepared trays about 4cm apart. Press each ball with a floured fork. Press half a blanched almond onto each biscuit.

Bake 12 minutes or until golden. Stand biscuits on trays for 5 minutes, then transfer to a wire rack to cool. |
