Almond Biscuits

Ingredients

  • 125g butter, softened

  • ½ cup (110g) caster sugar

  • 1 egg

  • ½ teaspoon almond essence

  • 1½ cups (225g) White Wings plain flour

  • 1 teaspoon Aunty Mary or Excelsior baking powder

  • 12 blanched almonds

Method

1 Preheat oven to 170°C. Grease 2 baking trays.
2 Using an electric mixer, beat butter and caster sugar until light and creamy. Add egg and almond essence and beat well. Sift in flour and baking powder and mix with a wooden spoon to form a dough
3 Roll tablespoonfuls of dough into balls and place on prepared trays about 4cm apart. Press each ball with a floured fork. Press half a blanched almond onto each biscuit.
4 Bake 12 minutes or until golden. Stand biscuits on trays for 5 minutes, then transfer to a wire rack to cool.
