  • For Sponge

    • 1 egg
    • 40mL (2 Tbsp) water

    For Sauce

    • 420mL (1 2/3 cups) boiling water
    • Preparation time: 10 mins
    • Chilling time: 30-35 mins
    • Serves: 4

    Preheat oven and mix batter

    Preheat oven to 200C (400F) or 180C for fan-forced. Empty the sponge mix sachet into a mixing bowl. Add egg and water. Using electric mixer beat on medium speed for 1 minute.

    Assemble

    Spread batter into an ungreased 1 – 1 ½ litre (4-6 cup) ovenproof baking dish. Sprinkle the sauce sachet evenly over the surface of batter.

    Add boiling water and bake

    Pour boiling water carefully over the pudding (no need to mix further). Bake for 30-35 minutes or until golden. Serve warm with cream or ice cream.
