Vanilla Cupcakes

  • For Cakes

    • 1 pack White Wings Vanilla Cupcakes 410g
    • 2 eggs
    • 160mL (2/3 cups) milk
    • 60g (3 Tbsp) margarine spread or soft butter

    For Frosting

    • 80g (4Tbsp) margarine spread or soft butter
    • Preparation time: 15 mins
    • Cooking time: 10-15 mins
    • Serves: 18

    Preheat

    Preheat oven to 180C (350F) or 160C for fan-forced. Line with patty pans 12 X 1/3cup capacity muffin tray.

    Mix

    Empty the cake mix sachet into a mixing bowl. Add eggs, milk and margarine spread or soft butter. Using electric mixer beat on low speed for 30 seconds to combine. Increase speed to medium and mix for 3 minutes. Scrape down sides of bowl occasionally.

    Bake

    Spoon batter into prepared muffin tray. Bake for 20-25 minutes or until a skewer inserted into the centre comes out clean. Stand 5 minutes before turning onto a wire rack to cool.

    Frosting

    Combine frosting sachet ingredients and margarine spread or soft butter in a bowl. Using electric mixer beat on low speed for 30 seconds to combine. Increase speed to high and mix for 3 minutes. Scrape down sides of bowl occasionally. Spread over cooled cup cakes.
