Preheat
Preheat oven to 180°C (350°F) or 160°C for fan-forced. Grease or line the base of a biscuit tray with baking paper

Mix
Empty Choc Chip cookie sachet into a mixing bowl. Add egg, desiccated coconut and oil. Mix with wooden spoon until combined, then kneed with hands to create dough.

Bake
Roll each mix into 8 balls for large cookies (or 12 balls for smaller cookies) and place on tray leaving approx 10cm between balls. Bake 1 tray at a time for 10-15 minutes for soft cookies or 15-18 minutes for crisp cookies. When removed from the oven, cookie centre will be soft to the touch but firm at the edges. Allow to cool on the tray for 5 minutes, then transfer to a wire rack.
Optional: Sprinkle with extra coconut before serving.
