PreheatPre-heat oven to 180°C (350°F) or 160°C for fan-forced. Lightly grease a 12 x ⅓ cup capacity standard muffin tray or line with paper cases. |

MixSoak diced dates in a large bowl containing the warm water for 5 minutes. Empty muffin mix sachet into the same bowl containing the diced dates and stir gently with a wooden spoon until just combined. |

BakeSpoon mixture into muffin holes. Bake for 18 -20 minutes or until a skewer inserted into centre comes out clean. Stand 2 minutes. Remove the muffins on to wire tray.Recipe variation: Mega muffins (Makes 6) Spoon batter into a lightly greased large (texas) muffin pan and bake at 180° C for 22 – 25 minutes. Recipe variation: Mini muffins (Makes 24) Spoon batter into a lightly greased (mini) muffin pan and bake at 180° C for 12 – 15 minutes. Tip: To Freeze Muffins When completely cold, wrap muffins individually in plastic wrap. Place muffins in a freezer bag or storage container and seal. Freeze for up to 3 months. Tip: To Thaw Unwrap and stand at room temperature for 45 – 60 minutes. Alternatively place 1 unwrapped muffin on a sheet of paper towel onto a microwave turntable. Heat, uncovered on Medium (50%) power for 25 – 35 seconds until thawed. |
